Step-by-step on how to prepare fluffy Oil-Free Hummus

Step 1: Leave the chickpeas resting in water overnight and cook

First off, you need to cook the chickpeas. However, you will notice they are very solid and difficult to soften. That’s why we recommend leaving them resting in water overnight in a bowl and taking them to a boil the day after. This way, you will reduce cooking time and save money on cooking gas or electricity.

Step 2: Introduce the ingredients in a food processor

After you’re done cooking the chickpeas and they are soft, it is time to introduce them along with the rest of the ingredients in a food processor. Include in the blender 1 can of chickpeas, ¼ cup of aquafaba, 3-4 small cloves of garlic, 1 tablespoon of tahini, 2 tablespoons of lemon juice, ¼ tablespoon of paprika, and a pinch of salt. You need not do anything special. Just make sure that the proportions are correct.

Step 3: Turn on and blend until homogeneous

Now, it is time to close the lid and turn on the blender. It may take some time, but you want to end up with a homogeneous blend. Some ingredients irremediably show specks, especially paprika, but that’s fine if they are distributed regularly throughout the mixture.

It replaces sour cream, butter, and similar types of spread. It works great as a replacement for mayonnaise in salads, too, especially tuna salad, and you have to try it on your mashed potatoes.

Fluffy Oil-Free Hummus (Recipe)

Preparing a fluffy oil-free hummus is not difficult at all. You only need a powerful blender or food processor and the right ingredients in the right proportion. Include the chickpeas, the aquafaba, a few cloves of garlic, a tablespoon of tahini, a pinch of salt and paprika, and two tablespoons of lemon juice. Turn on the food processor and blend until the mix is homogeneous.
After preparing this hummus blend, you’re ready to serve it to your guests, and we have provided a few ideas for you in this article. The easiest preparation is simply chopping a few carrots into sticks or any other vegetable and using hummus as a dip. You can also prepare pesto sauce with kale, guacamole with avocados, and much more.

Notes

Useful tips:
  • Hummus is one of the best replacements you can have as a vegan for mayonnaise and animal protein
  • After boiling the chickpeas, you can optionally take out the skin. This requires taking each one, squeezing, and peeling off. You can optionally use baking soda to make the skin fall off on its own. When you take off the peel, the resulting hummus feels creamy and smooth in contrast with a coarse texture if you skip this step.
