Pancake recipe with cottage cheese, step by step

If you consider this recipe’s ingredients, they are not very different from the standard pancakes. But we’re walking you through preparing them as we’re used to doing:

Step 1: Mix the cottage cheese and milk in a blender

First, you need a blender to obtain a homogeneous mix of the ingredients. The first ingredients you want to include in this pancake recipe with cottage cheese are milk and, of course, cottage cheese. They will be 200 grams of cottage cheese and 200 mL of milk, and start the blender until you get a homogeneous mix.

Step 2: Add 6 tablespoons of flour

Stop the blender and add 6 tablespoons of flour. This is baking flour, but you can also look for one of those tasty pancake flours if you want. Start the blender again and make sure there are no clots of flour before turning to the next step.

Step 3: Add 60 grams of butter, 3 eggs, and ½ tablespoon of salt

Now it is time to add butter, eggs, and salt to the mix. 60 grams of butter will give your pancakes a fantastic taste and contribute nicely to the texture. You also need to add 3 eggs, and you need not take out the yolk. And make sure that you’re not using too much salt. Half a tablespoon or less is usually enough.

Step 4: Place the mix in a bowl

Start the blender once again with the ingredients above and make sure that you get a very homogeneous blend. If you see no clots, you can now place the mix in a new bowl.

Step 5: Chop some parsley and dill. Add them to the mix

Parsley and dill will give your pancake recipe with cottage cheese a particular taste and a healthy appearance. Do not chop too much, just enough to flavor it up. Add the chopped vegetables to the mix and stir.

Step 6: Rest the dough for 20 minutes

Resting the dough is very important because you want every ingredient to blend in and the dill and parsley’s flavor to spread on the dough. 20 minutes is usually enough, and you can prepare something else meanwhile.

Step 7: Heat the pan and pour a portion of the mix

One thing you can take care of while resting the dough is heating the pan. Before pouring the dough, it should be scorching. Once it reaches the desired temperature, take some dough to the pan and spread it all over the hot surface.

Step 8: Fry for one minute on each side and repeat

One-minute frying is enough, and then you can take a spatula and fry for one minute on the other side. Repeat the same pouring, spreading, and frying process until you’re done with the dough.

Step 9: Grease with butter and serve

This is more of an optional step, but it will make your pancake recipe with cottage cheese taste even better. Use a tablespoon of butter and grease the pancakes all over. Then you can serve the pancakes in different presentations. This is only one example:

As we mentioned before, there are different variants for this pancake recipe with cottage cheese. One variant has to do with the flour you use. It can be simply all-purpose flour if you don’t want to think about it too much or if you already have it in your pantry. But you could also use one of these pancake-ready flours, in which case the eggs and butter are optional. You need to read the label, though, to know how to proceed. Finally, if you want a very healthy recipe, you can choose whole-wheat flour.

Notes

Useful tips
  • Reapply cooking spray between pancakes to prevent any sticking
  • You want to use non-stick pans, even if you have cooking spray
  • When you're buying the cottage cheese, make sure that you're picking the one with the smaller curds
  • Cooking temperature should be set to medium heat to prevent burning your pancakes on either side
