This is a straightforward pancake recipe with cottage cheese, and you can have them ready in less than one hour. The first step would be mixing the ingredients, starting with cottage cheese and milk. Then, use the blender to mix with flour until you see no clots. Add the butter, eggs, and salt, and repeat the process. You can add some dill and parsley to boost the taste and make it healthier.
The only step that requires some time is the dough's waiting time to rest and blend in the different flavors of the ingredients. Once done, you can fry the pancakes,grease them with butter, and serve.

Ingredients
  

  • 200 grams of cottage cheese
  • 200 mL of milk
  • 6 tablespoons of flour
  • 60 grams of butter
  • 3 eggs
  • ½ tablespoon of salt
  • Dill
  • Parsley

Instructions
 

  • Mix the cottage cheese and milk in a blender
  • Add 6 tablespoons of flour
  • Add 60 grams of butter, 3 eggs, and ½ tablespoon of salt
  • Place the mix in a bowl
  • Chop some parsley and dill. Add them to the mix
  • Rest the dough for 20 minutes
  • Heat the pan and pour a portion of the mix
  • Fry for one minute on each side and repeat
  • Grease with butter and serve

Notes

Useful tips
  • Reapply cooking spray between pancakes to prevent any sticking
  • You want to use non-stick pans, even if you have cooking spray
  • When you're buying the cottage cheese, make sure that you're picking the one with the smaller curds
  • Cooking temperature should be set to medium heat to prevent burning your pancakes on either side
