Banana bread is what you want to prepare if you don't want to throw your ripe bananas. It is a very easy recipe, and it won't take over10 minutes to blend and around 1 hour to bake. So, it is convenient, and here's what you need to know about it:
Preparing this bread is only about mixing flour, sugar, baking soda, salt, and chopped pecans very well. In another bowl, mix mashed bananas with mayonnaise and one egg. Once they are both very homogeneous, mix them together until they form a thick and uniform mass. Take it to the oven using a special bread baking tray, and it will be ready after 60 or 70 minutes.
You can make the recipe as healthy as you want, but it's up to you. If you prefer a finer texture, we recommend using cake flour. But if you prefer healthy and nutritious food, go for whole wheat. Instead of refined sugar, you can use coconut sugar or another healthy replacement.
Banana bread is very versatile and stays moist for one day or two on the countertop. All you need to do is wrapping it in plastic or using a plastic container. To store it for more than a few days, freezing would be ideal, and it is made by wrapping in foil and placing the bread in zip-top bags.

Notes

Useful tips
  • You can use any tool on your grasp to mix the ingredients. It need not be a balloon whisk. You can do it with a fork or a hand mixer. Hand mixers may give the blend a creamy and finer texture, so it is a great choice if you don't care about cleaning extra dishes.
  • If you don't have a bread baking tray, you can also use a muffin tin. Prepare it with paper liners and fill the cups around ¾. It will be banana muffins instead of bread loaves, but it will taste the same.
