Sweet potato casserole with Marshmallows (Recipe)

This is a straightforward recipe of sweet potato casserole with marshmallows. It will take only one hour, baking time included. First, you need to boil the sweet potatoes and mash them with butter. Add brown sugar, vanilla, salt, and cinnamon and mix everything. When it is homogeneous, add the walnuts and place the marshmallows on top. It will go to the oven for 25 minutes, and you’re ready to go.

Ingredients
  

  • 1 Kg of sweet potatoes
  • ½ cup of brown sugar
  • 3 tbsp of butter
  • 1 ½ cups of marshmallows
  • 1 tbsp of vanilla
  • ½ cup of walnuts
  • 1 tbsp of salt
  • 1 tbsp of cinnamon

Instructions
 

  • Peel the sweet potatoes
  • Cut them into large pieces
  • Boil in water for 30 minutes
  • Cut the walnuts into pieces
  • Mash the sweet potatoes
  • Add butter and mix
  • Add salt, cinnamon, brown sugar, and vanilla
  • Add the walnuts to the mix
  • Add the marshmallows on top
  • Bake for 25 minutes
  • Enjoy

Notes

Useful tips:
  • To make this recipe sweeter, roast the sweet potatoes instead of boiling them. By doing so, the texture will be thicker, and the flavor will be sweeter
  • You can always use marshmallows and an additional topping of pecan streusel simultaneously. Adding both will make it stand out
  • You will know that baking is done because the marshmallows will brown, which is very important to keep the texture and taste consistent when reheating.
